Frozen Fruit Yogurt Bark

Yogurt bark is a breeze to whip up, taking just 10 minutes of your time! The process is similar to making chocolate bark: Spread out a layer of yogurt, sprinkle on your favorite toppings, let it set, and then break it into delicious chunks.

I prefer using full-fat Greek yogurt for a creamier texture (it's less icy than low-fat) but feel free to opt for low-fat or dairy-free alternatives if you prefer. While they might be a tad icier, they'll still be just as yummy! I've added some of my go-to fruits, like bananas, blueberries, and strawberries, but you can mix and match your favorites. Adding small sprinkles, like rainbow jimmies (the rod-shaped ones), makes it extra fun!

Feel free to utilize your preferred fresh fruits and slice them thinly or opt for the convenience of presliced frozen fruits. Since everything will be frozen, freshness isn't a must. Personally, I lean toward fresh strawberries and bananas because I can control the thickness of the slices. Some fruits need to be cut very thin so that it's easier to bite when frozen.

Servings:

1 bark (about 7 x 11 in.)

Tools You’ll Need:

  • Small tray
  • Parchment paper
  • Spoon
  • Measuring cup
  • Knife
  • Cutting board
  • Plate to hold cut fruit
  • Small piping bag (optional)

Ingredients You’ll Need:

  • 3/4 cup vanilla Greek yogurt, sweetened or unsweetened
  • 2 to 3 strawberries, thinly sliced
  • 1/2 medium-size banana, thinly sliced
  • 1/4 cup blueberries, whole or halved
  • 1-2 Tbsp. rainbow sprinkles (optional)
  • Melted semisweet chocolate (optional)
  • 1 Tbsp. nuts, crushed (optional)

1. Slice the fruit

Slice the bigger fruits, like strawberries and bananas, very thin so that the bark is easier to eat after freezing. The blueberries can be whole or halved pieces. Set the fruit aside.

2. Layer the yogurt

Lay a parchment paper piece on a small tray. Then, layer on the Greek yogurt thin and even. Try to make it about 1/8 inch thin. If it's any thicker than that, it may be hard to bite.

Tip

If you accidentally make the yogurt bark too thick, you can leave out the bark pieces after breaking them so that they warm up a little.

3. Layer the fruits

Add the fruits in one layer and then add the sprinkles. You can space the fruits apart like I have or put them close together—it's up to you! I like to space the fruits apart to make it prettier and to allow space for the sprinkles.

Tip

If you love nuts and chocolate, you can quickly drizzle on melted chocolate and top it with your favorite crushed nuts before freezing. Make sure you crush the nuts so they are easier to bite after freezing.

4. Freeze it

Put the yogurt tray into the freezer for about 2 hours or overnight. It's ready when you can lift and peel it from the parchment paper.

5. Break it into pieces

Break the frozen yogurt bark into pieces using your hands.

Tip

For a different treat, you can also break the yogurt bark into even smaller pieces and blend them with more fruits to create a yogurt smoothie!

If you'll be storing the yogurt bark for later, you can freeze it as whole pieces and break it apart when you'd like. Keep it in a reclosable bag or an airtight container to avoid freezer burn.
